Pick-up

The number of rooms actually booked out of a block, or the volume of bookings taken over a given period, measured against what was expected.

In group business, pick-up is how many rooms a group has genuinely filled against the number it reserved. A block of 50 rooms with 32 named reservations has picked up 32. The gap is the exposure: rooms held off sale that may never be paid for.

In revenue management the same word describes booking pace, the rooms picked up since the last time you looked, which is what tells you whether demand for a date is running ahead of or behind the forecast.

Pick-up is only useful if it is current, and it is the number most likely to go stale. Where it is tracked outside the PMS, or where a block's guest counts change without the figure following, the revenue team prices against a picture that is no longer true. Accurate pick-up by room category and occupancy, rather than one total for the block, is what makes it usable for pricing rather than just for reporting.
